Chicken Bites
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 2 tablespoons ranch seasoning mix
  • 0.5 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • cooking spray for coating

Method
 

  1. Step 1: Preheat the Air Fryer
    Preheat your air fryer to 375°F (190°C) while you prepare the chicken.
  2. Step 2: Prepare the Coating
    In a medium bowl, mix together the panko breadcrumbs, ranch seasoning mix, and grated Parmesan cheese.
  3. Step 3: Coat the Chicken
    Dip each chicken piece into the beaten eggs, ensuring it’s well-coated. Then coat in the breadcrumb mixture, pressing lightly so the coating sticks.
  4. Step 4: Arrange in the Air Fryer
    Place the coated chicken bites in a single layer in the air fryer basket. Lightly spray them with cooking spray for extra crispiness.

    Cook for 10–12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Notes

For a spicy kick, add a pinch of cayenne pepper to the breadcrumb mix. These chicken bites also work great in wraps or over salads for a crispy protein boost.
