Method
- Step 1: Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- Step 2: Season chicken breasts with salt, pepper, garlic powder, onion powder, and paprika. Rub the seasonings into the chicken for full flavor.
- Step 3: In a large skillet, heat olive oil over medium heat. Sear chicken for 5–7 minutes per side, until golden brown. Remove and set aside.
- Step 4: In a large mixing bowl, combine cream of mushroom soup, cream of chicken soup, sour cream, and chicken broth. Whisk until smooth.
- Step 5: Add softened cream cheese to the mixture and blend until creamy using a whisk or mixer. Fold in uncooked rice, cheddar cheese, and chopped green onions.
- Step 6: Arrange seared chicken breasts in the prepared baking dish. Pour the creamy rice mixture over the top, spreading evenly.
- Step 7: Cover the dish with aluminum foil and bake for 45 minutes. Then remove the foil and bake uncovered for another 15–20 minutes, until bubbly and golden.
- Step 8: Remove from the oven and let rest for 10 minutes before serving. Garnish with chopped parsley and serve with a salad or vegetables.
Notes
For a richer flavor, substitute part of the chicken broth with white wine or add a sprinkle of grated Parmesan cheese to the topping before baking.
