Ingredients
  

  • 4 Boneless, skinless chicken breasts
  • 10.5 oz can Cream of mushroom soup
  • 10.5 oz can Cream of chicken soup
  • 1 cup Sour cream
  • 1 cup Chicken broth
  • 8 oz package Cream cheese, softened
  • 1 cup Shredded cheddar cheese
  • 1 cup Uncooked white rice
  • 0.5 cup Chopped green onions
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • to taste Salt and black pepper
  • 1 tablespoon Olive oil
  • Fresh parsley, chopped (optional, for garnish)

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. Step 2: Season chicken breasts with salt, pepper, garlic powder, onion powder, and paprika. Rub the seasonings into the chicken for full flavor.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Sear chicken for 5–7 minutes per side, until golden brown. Remove and set aside.
  4. Step 4: In a large mixing bowl, combine cream of mushroom soup, cream of chicken soup, sour cream, and chicken broth. Whisk until smooth.
  5. Step 5: Add softened cream cheese to the mixture and blend until creamy using a whisk or mixer. Fold in uncooked rice, cheddar cheese, and chopped green onions.
  6. Step 6: Arrange seared chicken breasts in the prepared baking dish. Pour the creamy rice mixture over the top, spreading evenly.
  7. Step 7: Cover the dish with aluminum foil and bake for 45 minutes. Then remove the foil and bake uncovered for another 15–20 minutes, until bubbly and golden.
  8. Step 8: Remove from the oven and let rest for 10 minutes before serving. Garnish with chopped parsley and serve with a salad or vegetables.

Notes

For a richer flavor, substitute part of the chicken broth with white wine or add a sprinkle of grated Parmesan cheese to the topping before baking.
