- Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. - Step 2: Prepare Dry Ingredients
In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside. - Step 3: Cream Butter and Sugar
In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy, about 2–3 minutes. - Step 4: Add Wet Ingredients
Beat in the eggs one at a time, then mix in apple cider and vanilla extract until combined. - Step 5: Combine Mixtures
Gradually add the dry ingredients to the wet mixture, stirring until just combined. - Step 6: Scoop and Bake
Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12–15 minutes or until edges are golden. Let cool on wire racks. - Step 7: Make the Caramel Filling
In a saucepan over medium heat, melt butter, then stir in brown sugar and cream. Bring to a gentle boil and cook for 3–5 minutes until slightly thickened. Remove from heat and stir in vanilla. Let cool until spreadable. - Step 8: Assemble the Whoopie Pies
Spread caramel filling onto the flat side of one cookie, then sandwich with another cookie. Repeat with remaining cookies. Enjoy!
Notes
For extra flavor, reduce the apple cider before adding it to the dough for a more concentrated apple taste. Store whoopie pies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
