- 1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- 2. Prepare Apple Filling: In a bowl, mix sliced apples with lemon juice, sugar, cinnamon, nutmeg, and a teaspoon of cornstarch (if desired). Let sit for 10 minutes to release juices.
- 3. Make the Dough: In another bowl, combine flour, sugar, and salt. Cut in the chilled butter using a pastry cutter or fork until mixture is crumbly. Gradually add ice water until dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for 15 minutes.
- 4. Assemble Cookies: Roll out half the dough on a floured surface to 1/8-inch thickness. Use a cookie cutter to cut out circles. Place a small spoonful of apple filling and caramel sauce in the center of each circle. Fold over to form a half-moon and press edges with a fork to seal.
- 5. Bake: Arrange cookies on the prepared baking sheet. Brush tops with beaten egg and sprinkle with cinnamon sugar. Bake for 20 minutes, or until golden brown.
- 6. Cool & Serve: Let cookies cool slightly before serving. Drizzle with extra caramel if desired.
