Method
- Preheat the oven to 180°C (350°F).
- Season the cod fillets generously with salt and pepper.
- Heat olive oil in a skillet, then sauté the onion until translucent. Add garlic and ginger, cooking until fragrant.
- Stir in the coconut milk, lemon juice, and lemon zest. Bring to a gentle simmer.
- Place the seasoned cod fillets into a baking dish. Pour the coconut lemon sauce over the top.
- Bake for 20–25 minutes, or until the cod flakes easily with a fork.
Notes
Delicious served over jasmine rice, quinoa, or roasted vegetables. Add red pepper flakes or sliced chilies for heat.
