Ingredients
  

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  • For the Sauce:
  • ½ cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Method
 

  1. Cook the rice according to package instructions. Set aside when done.
  2. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and sauté for 6–8 minutes, until cooked through and golden.
  4. In a small bowl, whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice to make the sauce.
  5. Add mixed vegetables to the skillet and cook for 2–3 minutes, until crisp-tender.
  6. Remove skillet from heat and pour the bang bang sauce over the chicken and vegetables. Stir to coat evenly.
  7. Serve the chicken and veggies over bowls of rice. Garnish with extra sriracha or green onions if desired.

Notes

Adjust the level of heat by adding more or less sriracha. For extra crunch, top with sesame seeds or crispy onions.
