Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream butter and sugar until light and fluffy, about 2–3 minutes.
- Add egg and vanilla extract, mixing until fully combined.
- Gradually fold dry ingredients into wet ingredients until just combined.
- Scoop dough onto prepared baking sheet, spacing cookies evenly apart.
- Bake for 10–12 minutes, until edges are lightly golden. Cool completely.
- Press a small indentation into the center of each cooled cookie.
- Pipe or spoon custard into each indentation.
- Melt chocolate chips with vegetable oil and drizzle over filled cookies.
- Allow chocolate to set for 10–15 minutes before serving.
Notes
Store cookies refrigerated for best texture due to the custard filling. Serve chilled or slightly room temperature.
