Ingredients
  

Cookie Base
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Custard Filling
  • 1 cup vanilla custard
Chocolate Drizzle
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons vegetable oil

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy, about 2–3 minutes.
  4. Add egg and vanilla extract, mixing until fully combined.
  5. Gradually fold dry ingredients into wet ingredients until just combined.
  6. Scoop dough onto prepared baking sheet, spacing cookies evenly apart.
  7. Bake for 10–12 minutes, until edges are lightly golden. Cool completely.
  8. Press a small indentation into the center of each cooled cookie.
  9. Pipe or spoon custard into each indentation.
  10. Melt chocolate chips with vegetable oil and drizzle over filled cookies.
  11. Allow chocolate to set for 10–15 minutes before serving.

Notes

Store cookies refrigerated for best texture due to the custard filling. Serve chilled or slightly room temperature.
