Method
- Preheat oven to 350°F (175°C). Grease and flour a bundt pan thoroughly to prevent sticking.
- Cream together softened butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
- Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, alternating with the diced apples, and stir just until combined.
- Pour the batter evenly into the prepared bundt pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then carefully invert onto a wire rack to cool completely.
- Optional Glaze: In a small bowl, mix powdered sugar and brown sugar. Add 1–2 teaspoons of milk, stirring until smooth and pourable. Drizzle over cooled cake before serving.
Notes
For added texture, stir in ½ cup of chopped pecans or walnuts. Store covered at room temperature for up to 3 days or refrigerate for up to 5 days.
