Ingredients

  • 2 cups All-purpose flour
  • 1 cup Brown sugar, packed
  • 0.5 cup Granulated sugar
  • 0.5 cup Unsalted butter, softened
  • 3 Large eggs
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 2 cups Diced apples (about 2 medium)
  • 0.5 cup Powdered sugar (for glaze)
  • 2 tablespoons Brown sugar (for glaze)
  • 1 to 2 teaspoons Milk (for glaze)

Method

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt pan thoroughly to prevent sticking.
  2. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the diced apples, and stir just until combined.
  6. Pour the batter evenly into the prepared bundt pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then carefully invert onto a wire rack to cool completely.
  8. Optional Glaze: In a small bowl, mix powdered sugar and brown sugar. Add 1–2 teaspoons of milk, stirring until smooth and pourable. Drizzle over cooled cake before serving.

Notes

For added texture, stir in ½ cup of chopped pecans or walnuts. Store covered at room temperature for up to 3 days or refrigerate for up to 5 days.
