Ingredients

Brownie Layer
  • 1 cup Unsalted butter
  • 2 cups Granulated sugar
  • 4 large Eggs
  • 1 tsp Vanilla extract
  • 1 cup All-purpose flour
  • 1 cup Cocoa powder
  • 0.5 tsp Salt
Cheesecake Layer
  • 16 oz Cream cheese softened
  • 1 cup Granulated sugar
  • 3 large Eggs
  • 1 tsp Vanilla extract
  • 0.5 cup Sour cream
Caramel Sauce
  • 1 cup Granulated sugar
  • 6 tbsp Unsalted butter
  • 0.5 cup Heavy cream
  • 1 tsp Sea salt

Method

  1. 1. Prepare the Brownie Layer: Preheat the oven to 350°F (175°C). Melt butter, then stir in sugar until smooth. Add eggs and vanilla extract, whisking until fully incorporated.
  2. 2. Mix the Batter: In a separate bowl, sift together flour, cocoa powder, and salt. Gradually combine dry ingredients with the wet mixture until smooth.
  3. 3. Bake the Brownie Base: Pour the brownie batter into a greased 9-inch springform pan and bake for 25–30 minutes. Allow to cool completely before adding cheesecake layer.
  4. 4. Prepare the Cheesecake Layer: In a mixing bowl, beat softened cream cheese and sugar until fluffy. Add eggs one at a time, then mix in vanilla and sour cream until smooth.
  5. 5. Bake the Cheesecake: Pour the cheesecake mixture over the cooled brownie layer. Bake for 30–35 minutes, or until the center is just set. Let cool completely on a wire rack.
  6. 6. Make the Caramel Sauce: In a saucepan, heat sugar over medium heat until melted and amber-colored. Stir in butter until dissolved, then slowly add heavy cream while whisking. Stir in sea salt and let cool slightly.
  7. 7. Finish and Serve: Drizzle the caramel sauce generously over the cooled cheesecake. Refrigerate for at least 2 hours before slicing and serving.

Notes

Tip: For a perfectly smooth cheesecake, ensure all ingredients are at room temperature. You can also add chopped pecans or drizzle melted chocolate along with the caramel for extra decadence.
