  • 1.5 pounds lean ground beef
  • 1 red bell pepper seeded and chopped
  • 1 yellow onion chopped
  • 1 ounce taco seasoning mix
  • 2.5 cups biscuit mix like Bisquick
  • 1 cup water
  • cooking spray like Pam
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 4 ounces diced green chiles drained
  • 1.5 cups cheddar cheese, fiesta blend shredded, divided
  • 1 teaspoon garlic powder
  • 0.5 cup salsa mild

Method
 

  1. Preheat your oven to 350℉ (175℃).
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess fat.
  3. While the meat cooks, prepare the biscuit dough by combining biscuit mix and water in a bowl. Stir and mix by hand until well combined.
  4. Spray a 9x13" casserole dish with cooking spray. Press the dough into the dish and bake for 5–8 minutes until lightly golden. Remove but leave oven on.
  5. Add chopped onion and red bell pepper to the beef. Cook for 4 minutes. Stir in taco seasoning. Remove from heat.
  6. Spread the beef mixture evenly over the baked biscuit base.
  7. In a bowl, mix sour cream, mayonnaise, drained green chiles, ¾ cup shredded cheese, and garlic powder. Spread over the beef layer.
  8. Spoon salsa over the sour cream layer and top with the remaining shredded cheese.
  9. Bake the casserole uncovered for 30 minutes or until hot and bubbly. Let rest 5 minutes before serving.

Notes

Drain beef well to avoid sogginess. Spread dough evenly for a stable base. Use mild or spicy salsa based on taste. Add beans or corn for variation. Ground turkey works well as a substitute for beef.
