- Cook the Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Add Aromatics: Stir in the chopped onion and minced garlic. Cook for 3–4 minutes until the onion is softened and fragrant.
- Add Potatoes and Seasonings: Add the diced potatoes, salt, black pepper, paprika, and oregano. Stir well to combine.
- Simmer: Pour in the beef broth, cover the skillet, and reduce the heat to low. Cook for 20–25 minutes, or until the potatoes are tender and most of the liquid has been absorbed.
- Add Cheese: Sprinkle shredded cheddar cheese evenly over the beef and potatoes. Cover again and cook for 2–3 minutes until the cheese is fully melted and gooey.
- Garnish and Serve: Top with freshly chopped parsley and serve warm straight from the skillet.
Notes
For extra flavor, try adding diced bell peppers or a dash of Worcestershire sauce to the beef mixture. You can also swap cheddar for mozzarella or pepper jack for a spicy twist.
