Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Wash and cut the baby potatoes into halves or quarters so they cook evenly.
- Slice the smoked sausage into 1/4-inch thick rounds.
- In a small bowl, combine ranch seasoning, garlic powder, onion powder, and black pepper.
- Add potatoes to a large bowl. Drizzle with olive oil and sprinkle with half the seasoning mixture. Toss well to coat.
- Spread seasoned potatoes onto the baking sheet in a single layer. Scatter sliced sausage evenly over the top.
- Roast for 35–40 minutes, stirring halfway through, until potatoes are golden and tender.
- Remove the baking sheet from the oven, sprinkle cheddar cheese on top, and return to the oven for 5 minutes or until melted.
- Garnish with fresh parsley and serve hot with sour cream, if desired.
Notes
For extra crispiness, broil the potatoes for 2 minutes before adding the cheese. Swap cheddar for pepper jack for a spicy twist!
