Cheesy Ranch Potatoes and Smoked Sausage

Ingredients
  

  • 1 lb halal-certified smoked sausage, sliced into rounds
  • 4 cups baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 1 packet halal-certified ranch seasoning mix
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • 1 ½ cups shredded cheddar cheese
  • ½ cup sour cream, optional for serving
  • fresh parsley, chopped (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and cut the baby potatoes into halves or quarters so they cook evenly.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. In a small bowl, combine ranch seasoning, garlic powder, onion powder, and black pepper.
  5. Add potatoes to a large bowl. Drizzle with olive oil and sprinkle with half the seasoning mixture. Toss well to coat.
  6. Spread seasoned potatoes onto the baking sheet in a single layer. Scatter sliced sausage evenly over the top.
  7. Roast for 35–40 minutes, stirring halfway through, until potatoes are golden and tender.
  8. Remove the baking sheet from the oven, sprinkle cheddar cheese on top, and return to the oven for 5 minutes or until melted.
  9. Garnish with fresh parsley and serve hot with sour cream, if desired.

Notes

For extra crispiness, broil the potatoes for 2 minutes before adding the cheese. Swap cheddar for pepper jack for a spicy twist!
