- Preheat oven: Heat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Prep chicken: Slice each chicken breast horizontally to create four thin cutlets. Pound to even thickness.
- Marinate: Whisk together 1 tbsp olive oil, garlic, Italian seasoning, salt, and pepper. Toss chicken in marinade and refrigerate 15–30 minutes.
- Cook spinach: Heat remaining olive oil in a skillet over medium heat. Add spinach and cook 2–3 minutes until wilted. Set aside.
- Prepare filling: Beat softened cream cheese, then mix in wilted spinach and 1/2 cup mozzarella (plus Parmesan if using).
- Optional sear: Sear chicken 1–2 minutes per side in a hot skillet for extra flavor.
- Assemble: Arrange chicken in the baking dish. Spread cream cheese mixture over the top. Sprinkle with remaining mozzarella.
- Bake: Bake 20–30 minutes, until chicken reaches 165°F (75°C) and cheese is melted and lightly browned.
- Rest: Allow to rest for 5 minutes before serving.
Notes
Great served with rice, pasta, mashed potatoes, or low-carb sides like roasted vegetables. Add sun-dried tomatoes or mushrooms for even more flavor.
