Ingredients
  

  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced

Method
 

  1. Prepare all ingredients by chopping vegetables into bite-sized pieces. Cook lo mein noodles according to package directions until al dente. Drain and set aside.
  2. Heat a large skillet or wok over medium-high heat. Add a small amount of oil and sauté chicken until golden brown and cooked through, about 6–8 minutes. Remove from the skillet.
  3. In the same skillet, stir-fry the red and yellow bell peppers, carrots, and green onions for 3–4 minutes until tender-crisp.
  4. Return cooked chicken to the skillet. Add noodles, soy sauce, sesame oil, and minced garlic. Toss well until everything is evenly coated and heated through.
  5. Serve hot with extra soy sauce if desired.

Notes

Add a splash of oyster sauce or hoisin for deeper flavor. You can also substitute chicken with shrimp or tofu.
