Method
- Heat olive oil in a large pot over medium heat. Add sliced chicken sausage and cook for 5–7 minutes until browned.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in broccoli florets and cook for 2–3 minutes, just until they begin to soften.
- Add orzo, chicken broth, Italian seasoning, salt, and pepper. Bring mixture to a boil, then reduce heat and simmer.
- Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
- Remove from heat and stir in the grated Parmesan until melted and creamy.
- Serve warm, garnished with fresh parsley.
Notes
For extra creaminess, add a splash of heavy cream or a spoonful of mascarpone at the end. Swap broccoli for spinach or peas if preferred.
