Ingredients
  

Dry Ingredients
  • 2 ¾ cups all-purpose flour Measure by spooning it into the cup and leveling it.
  • 1 cup unsweetened cocoa powder Sift to avoid lumps.
  • 1 teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar Adds sweetness and structure.
  • ½ cup powdered sugar Helps make the dough soft and tender.
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream the butter and sugars together until light and fluffy.
  4. Beat in the eggs and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll out the dough on a floured surface to 1/4 inch thickness and cut out shapes with cookie cutters.
  7. Place cookies on a baking sheet lined with parchment paper.
Baking
  1. Bake for 8-10 minutes until firm.
  2. Let cool before decorating with icing sugar or melted chocolate.

Notes

Keep cookies in an airtight container at room temperature for 3–5 days. For longer storage, freeze in a sealed bag for up to 2 months. Thaw at room temperature before serving. If you add icing or melted chocolate, store in a cool place. Do not overbake — cookies firm up as they cool.
