Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a separate bowl, cream the butter and sugars together until light and fluffy.
- Beat in the eggs and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll out the dough on a floured surface to 1/4 inch thickness and cut out shapes with cookie cutters.
- Place cookies on a baking sheet lined with parchment paper.
Baking
- Bake for 8-10 minutes until firm.
- Let cool before decorating with icing sugar or melted chocolate.
Notes
Keep cookies in an airtight container at room temperature for 3–5 days. For longer storage, freeze in a sealed bag for up to 2 months. Thaw at room temperature before serving. If you add icing or melted chocolate, store in a cool place. Do not overbake — cookies firm up as they cool.
