Ingredients
  

Crust
  • 24 Christmas sugar cookies or shortbread cookies
  • 6 tbsp unsalted butter, melted
Cheesecake Layer
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream or whipped topping
Pudding Layer
  • 1 package instant vanilla pudding mix 3.4 oz
  • 1 ½ cups cold milk
  • ½ tsp almond extract optional
  • ½ cup crushed Christmas cookies
Topping
  • 2 cups whipped topping
  • crushed cookies, sprinkles, or mini chocolate chips for garnish

Method
 

  1. Crush the cookies for the crust into fine crumbs using a food processor or by hand.
  2. Mix the cookie crumbs with melted butter until evenly moistened.
  3. Press the mixture firmly into the bottom of an 8x8-inch dish and refrigerate while preparing the filling.
  4. In a medium bowl, beat the cream cheese, sugar, and vanilla until smooth and creamy.
  5. Fold in the whipped topping or whipped cream, then spread evenly over the chilled crust.
  6. In another bowl, whisk together the pudding mix, cold milk, and almond extract until thickened.
  7. Stir in the crushed cookies and spread the pudding layer over the cheesecake layer.
  8. Top with whipped topping and garnish with crushed cookies, sprinkles, or mini chocolate chips.
  9. Refrigerate for at least 4 hours or overnight before slicing and serving.
