Ingredients
  

  • 1.75 cups all-purpose flour (210g)
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar (200g)
  • 2 large eggs
  • 1 cup buttermilk (240ml)
  • 2 tsp vanilla extract
  • 0.5 cup red and green sprinkles (jimmies style)
  • 1 tbsp coarse sugar (optional topping)
  • additional sprinkles for garnish (optional)

Method
 

  1. Preheat the oven to 350°F (175°C). Line or grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk the melted butter and sugar until smooth. Add eggs one at a time, then stir in the vanilla and buttermilk.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Gently fold in the sprinkles, being careful not to overmix to prevent color bleeding.
  6. Pour the batter into the prepared loaf pan. Smooth the top and add coarse sugar or sprinkles if desired.
  7. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10–15 minutes, then transfer to a cooling rack to cool completely.

Notes

Use jimmies-style sprinkles only—nonpareils will bleed into the batter. For extra flavor, add 1/2 teaspoon almond extract. Bread stays moist for 3 days when wrapped tightly.
