Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream softened butter and 1/2 cup powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- In a separate bowl, whisk together flour, cocoa powder, coffee or espresso, and nuts if using.
- Gradually add dry ingredients to the butter mixture, mixing until just combined.
- Roll dough into 1-tablespoon-sized balls and place 2 inches apart on the baking sheet.
- Bake for 12–15 minutes, until edges are firm and centers remain soft.
- Allow to cool for a few minutes, then roll warm cookies in powdered sugar.
- Transfer to a wire rack and cool completely.
Notes
For extra tiramisu flair, dust finished cookies with a mix of cocoa powder and espresso powder before serving.
