Christmas Tiramisu Snowball Cookies

Ingredients
  

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • ¼ cup finely ground coffee or espresso
  • ½ cup finely chopped nuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, coffee or espresso, and nuts if using.
  5. Gradually add dry ingredients to the butter mixture, mixing until just combined.
  6. Roll dough into 1-tablespoon-sized balls and place 2 inches apart on the baking sheet.
  7. Bake for 12–15 minutes, until edges are firm and centers remain soft.
  8. Allow to cool for a few minutes, then roll warm cookies in powdered sugar.
  9. Transfer to a wire rack and cool completely.

Notes

For extra tiramisu flair, dust finished cookies with a mix of cocoa powder and espresso powder before serving.
