Method
- Prepare oven: Preheat to 350°F (175°C). Grease a loaf pan.
- Mix wet ingredients: In a bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla.
- Add dry ingredients: Stir in baking powder, baking soda, cinnamon, salt, flour, and oats until just combined.
- Layer batter: Pour half the batter into the loaf pan.
- Make cinnamon swirl: Mix melted vegan butter, brown sugar, and cinnamon. Spread half over the batter.
- Finish layering: Add remaining batter and top with the rest of the cinnamon swirl.
- Bake: Bake for 50–60 minutes or until a toothpick comes out clean.
- Cool: Allow bread to cool fully before frosting.
- Make frosting: Whisk powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth. Spread over cooled loaf.
Notes
For extra gooey swirls, add a third layer by dividing the swirl mixture into three parts. For a thicker frosting, chill for 10 minutes before spreading.
