Ingredients
  

  • 2 cups Ricotta cheese (whole milk)
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Cinnamon
  • 0.5 cup Mini chocolate chips
  • 2 sheets Pre-made pie crusts
  • 1 large Egg
  • to taste Sugar (for sprinkling)
  • 0.25 cup Chopped pistachios (optional garnish)
  • 3 pieces Maraschino cherries (optional garnish)
  • 0.25 cup Extra chocolate chips (optional garnish)

Method
 

  1. Step 1: In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips. Whisk until smooth.
  2. Step 2: Preheat oven to 375°F (190°C).
  3. Step 3: Unroll one pre-made pie crust and fit it into a 9x9-inch baking dish.
  4. Step 4: Spoon the ricotta mixture evenly over the crust.
  5. Step 5: Place the second crust over the filling, sealing the edges. Brush with beaten egg and sprinkle with sugar.
  6. Step 6: Bake for 30–35 minutes until golden brown.
  7. Step 7: Allow to cool for at least 30 minutes before cutting into squares. Garnish with chopped pistachios, cherries, or extra chocolate chips if desired.

Notes

For extra flavor, add a splash of orange zest or a few drops of almond extract to the ricotta filling. These squares taste even better after chilling for a few hours!
