- Step 1: In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips. Whisk until smooth.
- Step 2: Preheat oven to 375°F (190°C).
- Step 3: Unroll one pre-made pie crust and fit it into a 9x9-inch baking dish.
- Step 4: Spoon the ricotta mixture evenly over the crust.
- Step 5: Place the second crust over the filling, sealing the edges. Brush with beaten egg and sprinkle with sugar.
- Step 6: Bake for 30–35 minutes until golden brown.
- Step 7: Allow to cool for at least 30 minutes before cutting into squares. Garnish with chopped pistachios, cherries, or extra chocolate chips if desired.
Notes
For extra flavor, add a splash of orange zest or a few drops of almond extract to the ricotta filling. These squares taste even better after chilling for a few hours!
