Preparation
- Mince the garlic finely and squeeze fresh lemon juice, then set aside.
- Heat olive oil in a skillet, season chicken breasts with salt and pepper, and sear until golden brown for 3-4 minutes per side.
Cooking
- Place seared chicken in the crockpot, then sprinkle with minced garlic and caper berries. Pour in chicken broth and lemon juice.
- Sprinkle Italian seasoning over the top. Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
Serving
- Carefully remove chicken and keep warm. Whisk butter into the crockpot juices to create a rich sauce.
- Serve chicken topped with the buttery lemon-caper sauce, garnished with fresh parsley. Optionally, serve over cooked pasta or rice.
