  • 2 tsp Italian seasoning
  • 4 cloves fresh garlic minced
  • 1 cup low-sodium chicken broth
  • ¼ cup freshly squeezed lemon juice about 2 lemons
  • ¼ cup caper berries
  • 2 tbsp olive oil
  • 2 tbsp butter for sauce
  • ¼ cup fresh parsley chopped (for garnish)
  • Cooked pasta or rice optional for serving

Method
 

Preparation
  1. Mince the garlic finely and squeeze fresh lemon juice, then set aside.
  2. Heat olive oil in a skillet, season chicken breasts with salt and pepper, and sear until golden brown for 3-4 minutes per side.
Cooking
  1. Place seared chicken in the crockpot, then sprinkle with minced garlic and caper berries. Pour in chicken broth and lemon juice.
  2. Sprinkle Italian seasoning over the top. Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
Serving
  1. Carefully remove chicken and keep warm. Whisk butter into the crockpot juices to create a rich sauce.
  2. Serve chicken topped with the buttery lemon-caper sauce, garnished with fresh parsley. Optionally, serve over cooked pasta or rice.

Notes

For optimal tenderness, ensure chicken is not overcooked. The sauce can be thickened further with a cornstarch slurry if desired.
