  • 8-10 slices Bacon
  • 1 Tablespoon Butter or Olive Oil
  • 1 large Onion diced
  • 2 large Carrots peeled and sliced into small pieces
  • 4 cups Chicken Broth
  • 1 to 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder or 4 cloves minced garlic
  • ¼ teaspoon Dried Thyme
  • ½ to 1 teaspoon Red Chili Flakes
  • 16 ounces Gnocchi
  • 2 cups Heavy Cream or Half-n-Half
  • 2 cups Cheddar Cheese

Method
 

Preparation
  1. Cook the bacon until crispy, then set aside to cool and cut into small pieces.
  2. Heat a large pot with butter or olive oil, then sauté diced onions and carrots for 10-15 minutes until tender. Add chicken broth and bring to a simmer.
  3. Reduce heat to medium-low, stir in heavy cream or half-n-half and all spices, then simmer until slightly reduced, being careful not to boil.
  4. Gradually add grated cheddar cheese, allowing it to melt completely. Stir in gnocchi and cook for 2 minutes, then adjust seasonings if necessary.
  5. Stir in the cooked bacon pieces and serve hot, garnished with green onions, extra cheese, and bacon.

Notes

To prevent clumping, add the cheese in increments and ensure the cream mixture does not boil before adding the cheese.
