Method
- Preheat oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
- Steam or blanch cauliflower florets for 5–7 minutes until just tender. Drain and pat dry.
- In a large bowl, mix shredded chicken, buffalo sauce, and dressing. Add cauliflower and toss to coat. Season with salt and pepper.
- Transfer mixture to the baking dish. Sprinkle cheddar and mozzarella evenly on top.
- Bake 20–25 minutes until cheese is melted, bubbly, and the casserole is heated through.
- Remove from oven and top with green onions and parsley or chives if desired. Serve hot.
Notes
For extra heat, add additional buffalo sauce or a pinch of cayenne. For a thicker casserole, reduce dressing slightly.
