Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 2 cups cooked chicken breast, shredded
  • 1 cup buffalo sauce
  • 0.5 cup ranch or blue cheese dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 green onions, chopped
  • Salt and pepper, to taste
  • Fresh parsley or chives, chopped (optional garnish)

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  2. Steam or blanch cauliflower florets for 5–7 minutes until just tender. Drain and pat dry.
  3. In a large bowl, mix shredded chicken, buffalo sauce, and dressing. Add cauliflower and toss to coat. Season with salt and pepper.
  4. Transfer mixture to the baking dish. Sprinkle cheddar and mozzarella evenly on top.
  5. Bake 20–25 minutes until cheese is melted, bubbly, and the casserole is heated through.
  6. Remove from oven and top with green onions and parsley or chives if desired. Serve hot.

Notes

For extra heat, add additional buffalo sauce or a pinch of cayenne. For a thicker casserole, reduce dressing slightly.
