Ingredients
  

  • 2 tbsp Olive oil
  • 1 lb Boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Italian seasoning
  • 3 cloves Garlic minced
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 0.5 cup Grated Parmesan cheese
  • 8 oz Farfalle pasta or your favorite pasta
  • 1 cup Cherry tomatoes halved
  • 2 cups Fresh spinach
  • 1 tbsp Fresh basil chopped
  • Additional salt and pepper to taste

Method
 

  1. 1. Cook pasta: Bring salted water to a boil and cook pasta according to package directions until al dente. Drain and set aside.
  2. 2. Cook chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning. Cook for 6–7 minutes, stirring occasionally, until golden and cooked through.
  3. 3. Add garlic: Stir in minced garlic and cook for 1 minute, until fragrant.
  4. 4. Make sauce: Pour in chicken broth and heavy cream. Bring to a gentle simmer while stirring frequently.
  5. 5. Add cheese: Reduce heat to low and stir in Parmesan until melted and smooth.
  6. 6. Combine: Add cooked pasta, cherry tomatoes, and spinach to the skillet. Toss until evenly coated and spinach begins to wilt.
  7. 7. Finish and serve: Taste and adjust seasoning with salt and pepper. Remove from heat, sprinkle with fresh basil, and serve warm.

Notes

For extra flavor, sprinkle red pepper flakes or top with shredded mozzarella before serving. You can substitute half-and-half for a lighter sauce.
