Method
- Preheat oven to 425°F (220°C). Place a baking sheet inside to heat up.
- Peel the sweet potatoes if desired and cut into 1/4-inch fries.
- Soak the fries in cold water for 30 minutes to remove excess starch.
- Drain and dry the fries thoroughly. Toss with olive oil, garlic powder, paprika, salt, and pepper. Add cornstarch if using and mix to coat.
- Remove the hot baking sheet from the oven and spread fries in a single layer without crowding.
- Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
- Let cool slightly before serving.
Notes
For maximum crispiness, avoid overcrowding the baking sheet—use two pans if needed.
