Ingredients
  

  • 2 medium sweet potatoes, peeled and cut into 1/4-inch fries
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp cornstarch (optional for extra crispiness)

Method
 

  1. Preheat oven to 425°F (220°C). Place a baking sheet inside to heat up.
  2. Peel the sweet potatoes if desired and cut into 1/4-inch fries.
  3. Soak the fries in cold water for 30 minutes to remove excess starch.
  4. Drain and dry the fries thoroughly. Toss with olive oil, garlic powder, paprika, salt, and pepper. Add cornstarch if using and mix to coat.
  5. Remove the hot baking sheet from the oven and spread fries in a single layer without crowding.
  6. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
  7. Let cool slightly before serving.

Notes

For maximum crispiness, avoid overcrowding the baking sheet—use two pans if needed.
