Ingredients
  

Main Ingredients
  • 1 lb ground beef Can substitute with ground turkey or chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth Ensure it's gluten-free if necessary
  • 2 cups potatoes, diced
  • 1 cup carrots, shredded
  • 1 cup celery, chopped
  • 1 cup cheddar cheese, shredded Can substitute with pepper jack or cream cheese
  • 1 cup milk Adjust for desired thickness
  • Salt and pepper to taste
  • Optional toppings: bacon bits, green onions

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Place the cooked beef, chopped onion, minced garlic, beef broth, potatoes, carrots, and celery into the crockpot.
  3. Stir to combine all ingredients.
Cooking
  1. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  2. About 30 minutes before serving, stir in the cheddar cheese and milk.
  3. Season with salt and pepper to taste.
Serving
  1. Serve warm topped with optional bacon bits and green onions. Pair with crusty bread or a side salad.

Notes

To store the soup, let it cool completely before transferring it to an airtight container. It can stay in the refrigerator for up to 3-4 days. If freezing, it can be kept for up to 3 months.
