Method
- Step 1: Spray the slow cooker insert with nonstick spray for easier cleanup.
- Step 2: Place chicken breasts in the bottom of the crockpot and season with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
- Step 3: Add diced onion, minced garlic, drained beans, and diced green chiles over the chicken.
- Step 4: Pour chicken broth into the crockpot, covering all the ingredients.
- Step 5: Cover and cook on low for 5–7 hours or on high for 2–3 hours, until chicken is cooked and tender.
- Step 6: Remove chicken, shred with two forks, and return it to the crockpot.
- Step 7: Add cream cheese cubes and heavy cream, stirring to combine. Cover again and cook on high for 15–20 minutes, or until the cream cheese melts and the chili is creamy.
- Step 8: Stir in chopped cilantro before serving for a burst of freshness.
- Step 9: Serve hot, garnished with sour cream, tortilla strips, and shredded cheese.
Notes
For a thicker consistency, mash some of the beans before adding them to the crockpot. If you prefer extra heat, add diced jalapeños or a dash of hot sauce before serving.
