Ingredients
  

  • 4 pieces Boneless skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Chili powder
  • 0.25 teaspoon Cayenne pepper
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 30 oz Great northern beans, drained and rinsed
  • 8 oz Diced green chiles, drained
  • 3 cups Chicken broth
  • 4 oz Cream cheese, cut into cubes
  • 0.5 cup Heavy cream
  • 0.25 cup Chopped cilantro

Method
 

  1. Step 1: Spray the slow cooker insert with nonstick spray for easier cleanup.
  2. Step 2: Place chicken breasts in the bottom of the crockpot and season with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
  3. Step 3: Add diced onion, minced garlic, drained beans, and diced green chiles over the chicken.
  4. Step 4: Pour chicken broth into the crockpot, covering all the ingredients.
  5. Step 5: Cover and cook on low for 5–7 hours or on high for 2–3 hours, until chicken is cooked and tender.
  6. Step 6: Remove chicken, shred with two forks, and return it to the crockpot.
  7. Step 7: Add cream cheese cubes and heavy cream, stirring to combine. Cover again and cook on high for 15–20 minutes, or until the cream cheese melts and the chili is creamy.
  8. Step 8: Stir in chopped cilantro before serving for a burst of freshness.
  9. Step 9: Serve hot, garnished with sour cream, tortilla strips, and shredded cheese.

Notes

For a thicker consistency, mash some of the beans before adding them to the crockpot. If you prefer extra heat, add diced jalapeños or a dash of hot sauce before serving.
