  • 1 ½ cups water
  • cup butter
  • 1 cup firmly packed brown sugar
  • 2 tsp vanilla extract
  • 2 extra large eggs
  • 3 tbsp molasses
  • 2 tbsp golden syrup or substitute dark corn syrup
  • 1 ⅔ cups all purpose flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
For the toffee sauce
  • ½ cup whipping cream
  • ¼ cup butter
  • ¼ cup firmly packed brown sugar
  • 1 tbsp molasses
  • 2 tbsp golden syrup
  • 2 tsp vanilla extract

Method
 

Pudding Instructions
  1. Add dates and water to a small saucepan, bring to a boil, and simmer for a couple of minutes. Let stand while preparing the rest of the batter.
  2. Cream together butter, brown sugar, and vanilla. Add eggs one at a time, beating well after each addition.
  3. Beat in the molasses and golden syrup until well combined.
  4. Sift flour and baking powder together, then gradually add the dry ingredients to the creamed mixture, mixing until smooth after each addition.
  5. Puree the date mixture in a food processor or blender, then mix in the baking soda.
  6. Immediately add the hot date mixture to the batter and mix until smooth.
  7. Pour the batter into well-greased and floured muffin tins. Bake at 350°F for 18-20 minutes, or until the center is firm.
Toffee Sauce Instructions
  1. For the Toffee Sauce, bring all ingredients to a slow rolling boil for about 2 minutes.
