These delicious baked protein pancake bowls are an easy and convenient option for breakfast or meal prep. Simply mix all ingredients in an oven-safe bowl, bake, and add your favorite toppings.

Ingredients
  

Pancake Ingredients
  • 1 egg
  • 50 g yogurt vanilla or unflavoured
  • 70 ml milk I use soy or almond but any milk will work
  • 35 g flour all purpose
  • 25 g protein powder vanilla or white chocolate works well. This recipe uses a vegan protein powder, if using whey, use slightly less liquid.
  • 5 g zero calorie granulated sweetener or sweetener of choice, 1 tsp
  • ½ tsp baking powder

  • Oven-safe glass bowl

Method
 

Preparation
  1. Preheat oven to 180c (356 F).
  2. Add all ingredients to an oven-safe glass bowl and mix well. For meal prep, use separate bowls.
  3. Add your preferred toppings such as fresh fruit or sugar-free chocolate chips.
  4. Bake for 20-22 minutes.
  5. Remove from oven and let cool for 5-10 minutes.
  6. Serve with additional yogurt, peanut butter, or maple syrup as desired.

Notes

If using whey protein powder, adjust the liquid amount slightly. Get creative with your toppings for a personalized touch!
