These delicious Thai Peanut Chicken Wraps are a quick and easy meal, packed with vibrant vegetables and tender chicken, all coated in a rich and creamy peanut dressing. Perfect for a healthy lunch or light dinner, they can be prepared ahead of time for convenience.

Ingredients
  

For the dressing
  • ¼ cup peanut butter creamy natural
  • 2 tablespoons coconut aminos or gluten free soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon honey optional
  • 2-3 tablespoons warm water to thin dressing
  • red pepper flakes OR hot sauce Optional: Few dashes
For the wraps
  • 2 large spinach tortillas burrito size
  • 2 large carrots shredded (or ¾ cup shredded carrot)
  • 1 red bell pepper julienned
  • ¾ cup shredded red cabbage
  • 2 cups baby spinach
  • ¼ cup fresh cilantro diced
  • ¼ cup green onion diced
  • 2 tablespoons chopped roasted peanuts
  • 1 pound grilled or baked chicken breast sliced or diced into pieces

Method
 

Instructions
  1. In a small bowl, combine peanut butter, coconut aminos (or soy sauce), rice wine vinegar, grated ginger, honey, and warm water, mixing until you achieve a smooth dressing consistency; add red pepper flakes or hot sauce if you prefer a spicy kick.
  2. Evenly distribute shredded carrots, julienned red bell pepper, shredded red cabbage, baby spinach, diced cilantro, diced green onion, chopped peanuts, and sliced chicken breast between two large spinach tortillas.
  3. Drizzle half of the prepared dressing into each wrap, then carefully roll them up, tucking in the sides to secure all the ingredients; you can optionally use a toothpick to hold them together before cutting in half and serving with extra peanut sauce.
  4. For later consumption, wrap the finished burritos tightly in plastic wrap and store them in the refrigerator, where they will remain fresh for 3-4 days.
