- In a small bowl, combine peanut butter, coconut aminos (or soy sauce), rice wine vinegar, grated ginger, honey, and warm water, mixing until you achieve a smooth dressing consistency; add red pepper flakes or hot sauce if you prefer a spicy kick.
- Evenly distribute shredded carrots, julienned red bell pepper, shredded red cabbage, baby spinach, diced cilantro, diced green onion, chopped peanuts, and sliced chicken breast between two large spinach tortillas.
- Drizzle half of the prepared dressing into each wrap, then carefully roll them up, tucking in the sides to secure all the ingredients; you can optionally use a toothpick to hold them together before cutting in half and serving with extra peanut sauce.
- For later consumption, wrap the finished burritos tightly in plastic wrap and store them in the refrigerator, where they will remain fresh for 3-4 days.
