Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup molasses
  • 2 large eggs
  • 1 cup heavy cream
  • 3 tbsp powdered sugar

Method
 

  1. Prepare gingerbread: Preheat oven to 350°F (175°C). Whisk flour, baking soda, salt, and spices in a bowl. In another bowl, cream butter and brown sugar until fluffy. Mix in molasses and eggs. Add dry ingredients gradually and stir until just combined. Spread batter into a greased baking dish and bake 25–30 minutes, or until a toothpick comes out clean.
  2. Cool and cube: Let the gingerbread cool completely, then cut into bite-sized squares.
  3. Make whipped cream: Beat heavy cream and powdered sugar in a chilled bowl until soft peaks form.
  4. Assemble trifle: In a trifle bowl or glass cups, layer gingerbread cubes and whipped cream, repeating until full. Top with whipped cream. Add crushed gingerbread cookies or nuts if desired.
  5. Chill: Cover and refrigerate at least 2 hours to allow flavors to meld.

Notes

For added flair, drizzle caramel sauce between the layers or add a splash of rum extract to the whipped cream.
