- Preheat oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
- Season the chicken breasts with salt, pepper, garlic powder, and olive oil. Let sit for a few minutes.
- Layer sliced dill pickles over the top of each chicken breast.
- Sprinkle Parmesan cheese generously over the pickles.
- Bake for 25–30 minutes, or until the chicken reaches 165°F (75°C) and the top is golden brown.
- In a small bowl, mix the Greek yogurt and lemon juice until smooth.
- Serve the chicken warm, drizzled with the yogurt lemon sauce.
Notes
For extra crispiness, broil the chicken for 1–2 minutes at the end. Use spicy dill pickles for added heat.
