Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup crunchy dill pickles, sliced
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
Yogurt Lemon Sauce
  • ½ cup Greek yogurt
  • 1 tbsp lemon juice

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
  2. Season the chicken breasts with salt, pepper, garlic powder, and olive oil. Let sit for a few minutes.
  3. Layer sliced dill pickles over the top of each chicken breast.
  4. Sprinkle Parmesan cheese generously over the pickles.
  5. Bake for 25–30 minutes, or until the chicken reaches 165°F (75°C) and the top is golden brown.
  6. In a small bowl, mix the Greek yogurt and lemon juice until smooth.
  7. Serve the chicken warm, drizzled with the yogurt lemon sauce.

Notes

For extra crispiness, broil the chicken for 1–2 minutes at the end. Use spicy dill pickles for added heat.
