  • 5 Persian cucumbers
  • ½ tsp salt
  • ½ tbsp sesame oil
  • ¾ tbsp light soy sauce
  • 1/2-1 tbsp sugar
  • ¾ tbsp rice vinegar
  • 1 tbsp chili oil
  • ½ tbsp sesame seeds
  • ½ tbsp garlic

Method
 

Instructions
  1. Slice cucumbers at an angle to create oval shapes, adjusting thickness to your preference.
  2. Place sliced cucumbers in a bowl, sprinkle with 1/2 tsp salt, mix well, and refrigerate for at least 20 minutes to draw out water.
  3. Drain the accumulated water, then quickly rinse the cucumbers for 10 seconds before returning them to the bowl.
  4. Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic to the cucumbers.
  5. Stir all ingredients until thoroughly combined and then serve immediately.

Notes

For best results, allow the salad to chill in the refrigerator for another 15-30 minutes after mixing for the flavors to meld.
