- Slice cucumbers at an angle to create oval shapes, adjusting thickness to your preference.
- Place sliced cucumbers in a bowl, sprinkle with 1/2 tsp salt, mix well, and refrigerate for at least 20 minutes to draw out water.
- Drain the accumulated water, then quickly rinse the cucumbers for 10 seconds before returning them to the bowl.
- Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic to the cucumbers.
- Stir all ingredients until thoroughly combined and then serve immediately.
Notes
For best results, allow the salad to chill in the refrigerator for another 15-30 minutes after mixing for the flavors to meld.
