Ingredients
  

  • 1 lb turkey or chicken breakfast sausage pork-free substitute
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 2 cups bread cubes optional
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • ½ cup diced bell peppers optional
  • ½ cup chopped spinach optional
  • ¼ cup diced onion optional

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a 7x11-inch baking dish with butter or nonstick spray.
  2. Cook the turkey or chicken sausage in a skillet over medium heat, breaking it into crumbles. Drain excess grease and set aside.
  3. In a large bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and smoked paprika.
  4. Layer the cooked sausage, optional vegetables, shredded cheese, and bread cubes (if using) in the prepared baking dish.
  5. Pour the egg mixture evenly over the layered ingredients.
  6. Bake for 30–40 minutes, or until the center is set and the top is lightly golden.
  7. Let the casserole cool for 5 minutes before slicing and serving.

Notes

This casserole can be assembled the night before and refrigerated. Bake fresh in the morning for an easy breakfast. Feel free to swap in your favorite vegetables or cheese blend.
