Ingredients
  

  • 1 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 0.75 cup Brown sugar, packed
  • 2 whole Large eggs
  • 1 teaspoon Vanilla extract
  • 2.25 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 cups Semi-sweet chocolate chips
  • 0.5 cup White chocolate chips
  • 0.5 cup Crushed peppermint candies

Method
 

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  5. Fold in semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
  6. Drop tablespoon-sized dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 9–11 minutes or until edges are golden brown. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

For an extra festive touch, drizzle with melted white chocolate and sprinkle more crushed peppermint on top once cooled.
