Method
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture until just combined.
- Fold in semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
- Drop tablespoon-sized dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9–11 minutes or until edges are golden brown. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack.
Notes
For an extra festive touch, drizzle with melted white chocolate and sprinkle more crushed peppermint on top once cooled.
