Frito Cowboy Cabbage

Ingredients
  

  • 16 oz Coleslaw mix
  • 15 oz Black beans, rinsed and drained
  • 1.5 cups Canned corn kernels, drained
  • 1 medium Jalapeño pepper, seeded and finely diced
  • 1 small Red bell pepper, seeded and finely diced
  • 3 pieces Green onions, finely sliced
  • 0.25 cup Fresh cilantro, finely chopped
  • 1 tablespoon Taco seasoning
  • 0.5 teaspoon Ground cumin
  • 9.75 oz Chili Cheese Fritos, divided
  • 0.5 cup Sour cream
  • 0.5 cup Mayonnaise
  • 0.25 cup Fresh lime juice (about 2 limes)
  • 2 tablespoons Chipotle sauce from chipotles in adobo

Method
 

  1. Step 1: In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss to mix evenly.
  2. Step 2: In a separate medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth and creamy.
  3. Step 3: Pour the chipotle dressing over the coleslaw mixture. Add all but a handful of Chili Cheese Fritos and gently toss to coat.
  4. Step 4: Just before serving, top with the remaining handful of Fritos for extra crunch. Serve immediately.

Notes

For a lighter version, substitute Greek yogurt for half the mayonnaise. Add diced avocado or grilled chicken to make it a complete meal.
