Chicken
  • 1 lb boneless skinless chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tsp paprika
  • ½ tsp garlic powder
  • salt and black pepper to taste
Creamy Parmesan Pasta
  • 300 g pasta penne, fettuccine, or your choice
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 ½ cups heavy cream
  • ½ cup Parmesan cheese grated
  • ½ tsp Italian seasoning
  • 2 tbsp fresh parsley chopped, plus more for garnish

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. Season the chicken with paprika, garlic powder, salt, and pepper.
  3. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–7 minutes until golden and cooked through.
  4. Add butter and minced garlic to the skillet. Stir and cook for 1–2 minutes until fragrant. Remove chicken and set aside.
  5. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
  6. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and Italian seasoning.
  7. Cook for 2–3 minutes, stirring frequently, until the sauce thickens slightly.
  8. Add cooked pasta to the sauce and toss to coat evenly. Stir in chopped parsley and adjust seasoning.
  9. Serve the creamy pasta topped with garlic butter chicken bites. Garnish with extra parsley and serve immediately.

Notes

For extra richness, add a splash of pasta water to the sauce if needed. This dish pairs well with a simple green salad or steamed vegetables.
