  • 4 Boneless skinless chicken breasts or thighs
  • 1 tsp Italian seasoning
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil
  • 1.5 lb Baby Yukon Gold or red potatoes halved
  • 3 tbsp Olive oil
  • 4 cloves Garlic minced
  • 0.33 cup Grated Parmesan cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Chopped fresh parsley optional, for garnish

Method
 

  1. 1. Preheat the Oven: Set oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
  2. 2. Prepare the Chicken: Pat chicken dry. Mix Italian seasoning, smoked paprika, salt, and pepper in a small bowl. Rub chicken with olive oil and coat evenly with seasoning.
  3. 3. Prepare the Potatoes: In a large bowl, toss halved potatoes with olive oil, garlic, Parmesan cheese, salt, and pepper until evenly coated.
  4. 4. Assemble: Place seasoned chicken on one side of the baking sheet and spread potatoes on the other side in a single layer.
  5. 5. Bake: Roast for 25–30 minutes, flipping potatoes halfway through. Check that chicken reaches 165°F (74°C).
  6. 6. Optional Finishing Touch: In the last 5 minutes, sprinkle extra Parmesan and broil for a golden crust.
  7. 7. Serve: Garnish with fresh parsley and serve hot.

Notes

For extra crispiness, place potatoes closer to the heating element during broiling. This dish pairs wonderfully with a simple green salad or roasted vegetables.
