- 1. Preheat the Oven: Set oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
- 2. Prepare the Chicken: Pat chicken dry. Mix Italian seasoning, smoked paprika, salt, and pepper in a small bowl. Rub chicken with olive oil and coat evenly with seasoning.
- 3. Prepare the Potatoes: In a large bowl, toss halved potatoes with olive oil, garlic, Parmesan cheese, salt, and pepper until evenly coated.
- 4. Assemble: Place seasoned chicken on one side of the baking sheet and spread potatoes on the other side in a single layer.
- 5. Bake: Roast for 25–30 minutes, flipping potatoes halfway through. Check that chicken reaches 165°F (74°C).
- 6. Optional Finishing Touch: In the last 5 minutes, sprinkle extra Parmesan and broil for a golden crust.
- 7. Serve: Garnish with fresh parsley and serve hot.
Notes
For extra crispiness, place potatoes closer to the heating element during broiling. This dish pairs wonderfully with a simple green salad or roasted vegetables.
