  • 1 lb Boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 2 tablespoons Olive oil
  • 1 small Onion finely diced
  • 4 cloves Garlic minced
  • 1 cup Long-grain white rice
  • 2 cups Chicken broth
  • 1 cup Milk
  • 0.5 cup Heavy cream
  • 0.75 cup Parmesan cheese grated
  • 2 tablespoons Butter
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley chopped, for garnish

Method
 

  1. 1. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, paprika, and Italian seasoning. Sear until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
  2. 2. Sauté Aromatics: In the same skillet, melt butter and add diced onion. Cook until soft and translucent, then stir in minced garlic and sauté for 1 minute until fragrant.
  3. 3. Toast the Rice: Add the rice and stir for 1–2 minutes to lightly toast it in the butter mixture.
  4. 4. Simmer: Pour in chicken broth, milk, and heavy cream. Stir well, bring to a gentle simmer, then cover and cook for 18–20 minutes until rice is tender and liquid is absorbed.
  5. 5. Add Cheese & Chicken: Stir in Parmesan cheese until creamy and melted. Return cooked chicken to the skillet and mix gently to coat everything in the sauce.

Notes
