- In a bowl, whisk together the olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
- Pound the chicken breasts to an even thickness, then add to the marinade and refrigerate for at least 30 minutes.
- Prepare the tzatziki sauce by mixing the Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and dill in a bowl. Chill until ready to use.
- Cook the rice or quinoa according to package instructions and prepare the vegetables.
- Preheat the air fryer to 380°F (193°C). Cook the marinated chicken for about 10 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes, then slice.
- Assemble the bowls with rice or quinoa, lettuce, vegetables, sliced chicken, feta cheese, and a generous spoonful of tzatziki.
Notes
