Greek Chicken Bowls

Ingredients
  

Chicken & Marinade
  • 4 small chicken breasts about 1 1/4 pounds
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes
Bowls
  • 2 cups cooked rice or quinoa
  • 2 cups grape tomatoes halved
  • 2 cups cucumber diced
  • 4 cups romaine lettuce shredded
  • 1 cup red onion sliced
  • ½ cup feta cheese
Tzatziki Sauce
  • 1 cup Greek yogurt
  • ½ cup cucumber grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 2 tbsp fresh dill chopped

Method
 

  1. In a bowl, whisk together the olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound the chicken breasts to an even thickness, then add to the marinade and refrigerate for at least 30 minutes.
  3. Prepare the tzatziki sauce by mixing the Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and dill in a bowl. Chill until ready to use.
  4. Cook the rice or quinoa according to package instructions and prepare the vegetables.
  5. Preheat the air fryer to 380°F (193°C). Cook the marinated chicken for about 10 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for a few minutes, then slice.
  7. Assemble the bowls with rice or quinoa, lettuce, vegetables, sliced chicken, feta cheese, and a generous spoonful of tzatziki.

Notes

These bowls are great for meal prep and can be customized with olives, hummus, or roasted vegetables. Store components separately for best freshness.
