  • 1 onion diced
  • 2 celery sticks finely chopped
  • 4 garlic cloves crushed
  • 500 g mushrooms thinly sliced
  • 2 tsp fresh thyme
  • 1 rotisserie chicken shredded
  • 6 cups stock
  • 1 cup cream
  • 3 cups spinach chopped
  • pinch chilli flakes
  • salt and pepper to taste

Method
 

Preparation & Cooking
  1. Heat a splash of olive oil or a knob of butter in a large pot on the stovetop.
  2. Add the diced onion and finely chopped celery to the pot and cook until they are soft and translucent.
  3. Stir in the thinly sliced mushrooms and continue to cook until they turn golden brown.
  4. Add the fresh thyme and crushed garlic to the pot, cooking briefly until they become fragrant.
  5. Pour in the stock and cream, then bring the mixture to a gentle simmer.
  6. Simmer the soup for 5 minutes, then add the shredded chicken and chopped spinach, continuing to simmer for another 5 minutes.
  7. Season the soup generously with salt and pepper, and add lemon juice to taste if desired.
  8. Serve the hearty rotisserie chicken and mushroom soup hot with your choice of bread.
