Ingredients
  

  • 2 pounds Carrots cut diagonally into 2 to 3-inch pieces
  • 5 tablespoons Butter
  • 4 cloves Garlic minced
  • 2 tablespoons Honey
  • 0.25 teaspoon Salt or to taste
  • 0.25 teaspoon Fresh ground black pepper
  • Chopped fresh parsley for garnish

Method
 

  1. 1. Preheat Oven: Set oven to 425°F (220°C). Grease a rimmed baking sheet with cooking spray and set aside.
  2. 2. Prepare Carrots: Cut carrots diagonally into 2–3-inch pieces and set aside.
  3. 3. Make the Honey Garlic Sauce: In a large nonstick skillet, melt butter over medium heat. Stir in minced garlic and cook for about 3 minutes, until lightly browned and fragrant. Remove from heat and stir in the honey until well combined.
  4. 4. Coat the Carrots: Toss carrots with the honey-garlic butter mixture in the skillet or in a mixing bowl. Season with salt and pepper, stirring to coat evenly.
  5. 5. Roast: Transfer coated carrots to the prepared baking sheet, spreading them out in a single layer. Roast for 22–25 minutes, or until browned and tender, stirring once halfway through for even cooking.
  6. 6. Finish and Serve: Remove from oven, taste, and adjust seasoning if needed. Garnish with fresh chopped parsley before serving.

Notes

For extra caramelization, broil the carrots for 1–2 minutes at the end of baking. You can also add a pinch of red pepper flakes for a sweet-spicy twist.
