Method
- Pat the chicken breasts dry with paper towels.
- Rub the chicken with olive oil, garlic powder, smoked paprika, salt, and black pepper.
- Preheat an oven-safe skillet over medium-high heat with a small drizzle of olive oil.
- Sear the chicken breasts for 3–4 minutes per side until golden brown.
- Lower the heat and drizzle hot honey over the chicken. Baste with a spoon and allow the honey to bubble for 1–2 minutes.
- Transfer the skillet to a preheated 375°F (190°C) oven and bake for 10–12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and immediately top with crumbled feta cheese and fresh thyme leaves.
- Let the chicken rest for 5 minutes before serving.
Notes
Serve with roasted vegetables, rice, or a crisp green salad. For extra heat, add a pinch of crushed red pepper flakes or finish with an extra drizzle of hot honey.
