Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons hot honey
  • ½ cup crumbled feta cheese
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method

  1. Pat the chicken breasts dry with paper towels.
  2. Rub the chicken with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  3. Preheat an oven-safe skillet over medium-high heat with a small drizzle of olive oil.
  4. Sear the chicken breasts for 3–4 minutes per side until golden brown.
  5. Lower the heat and drizzle hot honey over the chicken. Baste with a spoon and allow the honey to bubble for 1–2 minutes.
  6. Transfer the skillet to a preheated 375°F (190°C) oven and bake for 10–12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and immediately top with crumbled feta cheese and fresh thyme leaves.
  8. Let the chicken rest for 5 minutes before serving.

Notes

Serve with roasted vegetables, rice, or a crisp green salad. For extra heat, add a pinch of crushed red pepper flakes or finish with an extra drizzle of hot honey.
