  • 2 cups rolled oats
  • ½ cup peanut butter Smooth peanut butter is recommended for easy mixing.
  • ½ cup Irish cream liqueur For non-alcohol version, substitute with milk or cream.
  • ¼ cup honey
  • ½ cup chocolate chips
  • 1 teaspoon vanilla extract
  • ¼ cup cocoa powder Optional, for dusting.

Method
 

Preparation
  1. Measure all ingredients first.
  2. In a mixing bowl, combine the rolled oats, peanut butter, Irish cream liqueur, honey, chocolate chips, and vanilla extract. Mix until fully combined.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into balls.
  4. If desired, roll the balls in cocoa powder to coat.
  5. Place the cookies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
Serving
  1. Serve these chilled, paired well with coffee or milk.

Notes

Keep them in an airtight container. Store in the fridge for up to 1 week or freeze for up to 3 months. Thaw in the fridge before eating. For uniform shape, chill the bowl and spoon if your kitchen is warm.
