Preparation
- Measure all ingredients first.
- In a mixing bowl, combine the rolled oats, peanut butter, Irish cream liqueur, honey, chocolate chips, and vanilla extract. Mix until fully combined.
- Scoop out tablespoon-sized portions of the mixture and roll them into balls.
- If desired, roll the balls in cocoa powder to coat.
- Place the cookies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
Serving
- Serve these chilled, paired well with coffee or milk.
Notes
Keep them in an airtight container. Store in the fridge for up to 1 week or freeze for up to 3 months. Thaw in the fridge before eating. For uniform shape, chill the bowl and spoon if your kitchen is warm.
