  • 8 cups vegetable broth
  • 1 onion peeled and quartered
  • ¼ inch ginger
  • 2 carrots peeled
  • 4 sticks celery sliced in half
  • 6 cloves garlic
  • 1 tsp salt omit if vegetable broth is already salty
  • cup dry pastina
  • freshly cracked black pepper
  • fresh parsley chopped

Method
 

Instructions
  1. Bring vegetable broth to a boil in a pot, add all vegetables, and simmer for 25 minutes until slightly softened.
  2. Cook pastina separately according to package directions while the vegetables are simmering.
  3. Using a slotted spoon, transfer the cooked whole vegetables to a blender with about 2 cups of broth. Allow to cool slightly, then blend until a thick puree is formed.
  4. Pour the vegetable puree back into the pot with the broth and stir. Serve the broth over cooked pastina in bowls, topped with fresh parsley and black pepper.

Notes

For an even richer flavor, you can roast the vegetables before adding them to the broth. Adjust salt to taste, especially if using a store-bought broth.
