- Heat olive oil in a large soup pot over medium heat. Add the chicken or turkey Italian sausage and cook until browned, breaking it into small pieces.
- Add diced onion and cook until softened, then stir in minced garlic for 30 seconds.
- Pour in chicken broth and water. Add carrots, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.
- Stir in the tortellini and cook according to package directions until tender.
- Add chopped spinach and let it wilt into the soup.
- Reduce heat to low and stir in heavy cream and grated Parmesan until the broth becomes creamy.
- Taste and adjust seasoning. Ladle into bowls and serve with extra Parmesan on top.
Notes
For a lighter version, replace heavy cream with half-and-half. Use whole wheat or gluten-free tortellini if preferred. Chicken or turkey Italian sausage keeps this recipe pork-free while still giving rich, savory flavor.
