  • 1 lb chicken or turkey Italian sausage, casing removed pork-free substitute for Italian sausage
  • 9 oz cheese tortellini, fresh or frozen
Vegetables & Aromatics
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach, roughly chopped or baby kale
  • 1 cup diced carrots optional
Liquids & Seasoning
  • 6 cups low-sodium chicken broth or vegetable broth
  • 1 cup water as needed
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes optional
  • salt and black pepper to taste
Creamy Finish & Garnish
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 Tbsp olive oil for sautéing

Method
 

  1. Heat olive oil in a large soup pot over medium heat. Add the chicken or turkey Italian sausage and cook until browned, breaking it into small pieces.
  2. Add diced onion and cook until softened, then stir in minced garlic for 30 seconds.
  3. Pour in chicken broth and water. Add carrots, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.
  4. Stir in the tortellini and cook according to package directions until tender.
  5. Add chopped spinach and let it wilt into the soup.
  6. Reduce heat to low and stir in heavy cream and grated Parmesan until the broth becomes creamy.
  7. Taste and adjust seasoning. Ladle into bowls and serve with extra Parmesan on top.

Notes

For a lighter version, replace heavy cream with half-and-half. Use whole wheat or gluten-free tortellini if preferred. Chicken or turkey Italian sausage keeps this recipe pork-free while still giving rich, savory flavor.
