Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • 2 ½ cups all-purpose flour
  • ½ tsp salt
  • Red gel food coloring

Method
 

  1. Beat together the butter and powdered sugar until smooth and fluffy.
  2. Mix in the egg, vanilla extract, and peppermint extract until combined.
  3. In a separate bowl, whisk together the flour and salt. Gradually add the dry mixture to the wet mixture.
  4. Divide the dough in half. Tint one half with red gel food coloring.
  5. Wrap each dough half in plastic wrap and chill for 1 hour.
  6. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  7. Roll equal pieces of red and white dough into ropes, twist them together, and shape into candy canes.
  8. Place shaped cookies onto the prepared baking sheet.
  9. Bake for 8–10 minutes, or until just set. Allow to cool on the trays before serving.

Notes

For extra flair, sprinkle warm cookies with crushed candy canes.
