Ingredients
  

  • 0.25 cup unsalted butter, softened
  • 0.75 cup light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.125 tsp almond extract
  • pink gel food coloring, a small amount
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup maraschino cherries, drained and finely chopped
  • 0.75 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment or a silicone mat.
  2. Using a mixer, beat softened butter and brown sugar for 1 minute.
  3. Add egg, vanilla extract, and almond extract. Mix until combined.
  4. Add pink gel food coloring to reach your desired shade and mix well.
  5. In a separate bowl, whisk flour, baking soda, and salt. Gently fold dry ingredients into the wet mixture.
  6. Fold in chopped maraschino cherries and chocolate chips until evenly distributed.
  7. Scoop dough onto prepared baking sheet, spacing evenly. Press extra cherries and chocolate chips on top if desired.
  8. Bake 14–16 minutes, or until edges are lightly golden. Do not overbake to maintain soft texture and vibrant color.
  9. Cool on the baking sheet for 15 minutes, then transfer to a cooling rack. Enjoy!

Notes

For best color, dry cherries well before chopping. Overly wet cherries can discolor the dough.
