Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment or a silicone mat.
- Using a mixer, beat softened butter and brown sugar for 1 minute.
- Add egg, vanilla extract, and almond extract. Mix until combined.
- Add pink gel food coloring to reach your desired shade and mix well.
- In a separate bowl, whisk flour, baking soda, and salt. Gently fold dry ingredients into the wet mixture.
- Fold in chopped maraschino cherries and chocolate chips until evenly distributed.
- Scoop dough onto prepared baking sheet, spacing evenly. Press extra cherries and chocolate chips on top if desired.
- Bake 14–16 minutes, or until edges are lightly golden. Do not overbake to maintain soft texture and vibrant color.
- Cool on the baking sheet for 15 minutes, then transfer to a cooling rack. Enjoy!
Notes
For best color, dry cherries well before chopping. Overly wet cherries can discolor the dough.
