Meatloaf Layer
  • 1 lb ground beef (85/15 preferred)
  • 0.5 cup plain breadcrumbs
  • 0.33 cup milk
  • 1 large egg
  • 0.25 cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
Mashed Potato Layer
  • 3 cups mashed potatoes (prepared or leftover)
  • 0.25 cup sour cream
  • 2 tbsp butter
  • salt and pepper to taste
Topping
  • 1.5 cups shredded cheddar cheese
  • fresh parsley optional, for garnish

Method
 

  1. Step 1: Preheat and Prepare
    Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper.
  2. Step 2: Mix the Meatloaf
    In a large bowl, combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  3. Step 3: Bake the Meatloaf Layer
    Press the meat mixture evenly into the prepared dish and bake uncovered for 20–25 minutes.
  4. Step 4: Prepare the Mashed Potatoes
    While the meatloaf bakes, warm the mashed potatoes and stir in the sour cream and butter. Season with salt and pepper to taste.
  5. Step 5: Assemble the Layers
    Spread the mashed potatoes evenly over the baked meatloaf layer.
  6. Step 6: Add Cheese and Bake Again
    Top with shredded cheddar cheese and bake an additional 10–15 minutes, until the cheese is melted and bubbly.
  7. Step 7: Rest and Serve
    Let the casserole cool for 5–10 minutes. Garnish with chopped parsley, slice, and serve warm.

Notes

For extra flavor, mix a little Worcestershire sauce or chopped onion into the meatloaf base. You can also substitute ground turkey or chicken for a lighter option.
